Rum is produced from a giant grass known as sugar cane. The harvested cane is washed, chopped into short lengths and pressed to extract the water and cane juice. The process of extracting sugar from cane juice produces a by-product called molasses and this is what most rum is made from.
Rum can be made from fresh sugar cane juice (rhum agricole), cane syrup (boiled cane juice to remove some water content), or molasses (rhum traditional).

White Rum: This is either bottled without having been aged in wooden casks, or has been aged in wood but then had its colour removed through filtration.
Overproof Rum: This is a type of white rum that has been distilled to a high proof and is therefore much higher in alcohol content than standard rum.
Rhum Agricole: Also known as rhum blanc or rhum brut, is a type of rum made from sugar cane juice rather than molasses.
Cachaça: This is a distinctly Brazilian product, distilled from fermented sugarcane juice. While rum can also be made from sugarcane juice, most is distilled from molasses.
Spiced Rum: This is made from rum that is sweetened with sugar and seasoned with the likes of vanilla, citrus peel, and aromatic spices like cinnamon, nutmeg, and ginger.
Dark Rum and Navy Rum: These may have been aged for a long time in wooden casks, or that ageing period could have been much shorter, or it could be unaged. Some or even all of its colour may have been artificially added.
Gold Rum: That golden hue could come from the casks (usually bourbon) the rum was aged in. It could come from additional colouring like caramel. It could be both.
