Redbreast 12 Year Old Irish Whiskey

Redbreast 12 Year Old Irish Whiskey is made from a mash of malted and unmalted barley and then triple distilled in copper pot stills. A great example of the Irish pure pot still style (aka single pot still), which is the traditional method for Irish whisky production.

Colour
  • Deep copper.
Nose 
  • Nutty and slightly malty. 
  • Spicy, with pepper and a little black licorice. 
  • Hints of light berries and milk chocolate.
  • A touch of solvent smell.
 Palate
  • Up-front hit of brown sugar, vanilla, flat cola, and honey.
  • Light fruits with tart citrus appearing. 
  • Mouthfeel is very oily and juicy making it very distinctive.
  • A touch of bitterness at the end.
Finish
  • Moderately long, with persistent spice.
  • Flat cola returns.  
  • Bitterness persists, encouraging you to take another sip.

Yoichi Single Malt Whisky

The Yoichi distillery was built in 1934 in the northern coastal town of Yoichi in Japan. The location was selected for both its climate and coastal terroir, having a notable impact on the taste of this whisky.

Whisky Tasting Notes

Colour
  • Pours vibrant gold. 
Nose 
  • Pronounced and expressive with toffee apples, tangy citrus peels and oily/earthy peat smoke. 
  • Wet soils and greenery (herbs, leaves and mosses) and joined by sweet orange juice and slight nuttiness.
  • An intense combination of salty coastal smoke and seaweed with elements of further inland – woody, earthy and vegetal. 
  • Dry fires meet wet fires. 
  • Adding a few drops of water heightens sweetness and introduces the aroma of orange peels. 
 Palate
  • Slightly oily and starting with lemons, salty water and barley.
  • Peating is gentle, but pervasive across the whole mouth.
  • Mineral and nicely balanced with the fruitier elements. 
  • In the mid-palate, earthiness once more – soils, mosses and some well-defined maltiness. 
  • Sourness is delivered by grapefruit and sits alongside some cask influence – ginger and leather.
  • A few drops of water adds some juiciness to the fruits, a touch more sugar and really emphasises the minerality of the smoke.
Finish
  • Medium, with tangy citrus and some salinity in the tail.

Knob Creek 9Year Old Bourbon

Aged in charred white oak barrels, this bourbon has an unmistakable richness and signature sweetness. Knob Creek aims to recapture a pre-prohibition style bourbon, with more time spent in the barrel, and bottled at a higher proof. This bourbon is named for the creek that ran behind Abraham Lincoln’s childhood home in Kentucky.

Macallan 12 Year Old Double Cask

Macallan has been distilling almost continuously since 1824 when Scotland first legalized the production of spirits.

Macallan produced this whisky by using new American oak barrels filled with sherry to season them (not ex-bourbon like is typically used). These seasoned barrels are then used to age the whisky. This marries the classic Macallan style and the unmistakable sweetness of American oak.

Amrut Fusion Single Malt Whisky

The Amrut Fusion is a vatting of Indian malted barley and imported peated Scottish malt, distilled separately and married in ex-bourbon barrels in Bangalore. 

This whisky is outside the usual boundaries of old world whisky, and is a perfect introduction to Indian malt.

  • Jim Murray’s Third Finest Whisky in the World for 2010. 

Whisky Tasting Notes

Colour
  • Golden amber.
Nose 
  • Light and lemony, with elements of a Lowlander.
  • Some green apple, green banana, and green papaya. 
  • Mossy, with green honeysuckle. 
 Palate
  • Silky texture, but not heavily bodied. 
  • Bright, acidic notes up front of apple, lemon, club soda, with some light smoke. 
  • After a marginal tongue burn, deeper flavors of smoked almonds, caramel and butterscotch, banana trifle, malty cereal grains, and bakery sweets emerge.
Finish
  • Medium-long, with some nice light brown sugar, light oak, and malt. 
  • Lingering wafts of smoke, and more nuttiness.
