When it comes to making gin there is one rule that matters above all others – to have gin you must have juniper. More than a hundred different botanicals are commonly used to flavour gin and individual brands can contain anything from seven to twenty. It is the balance of these different ingredients and the varying distillation methods that give different brands their distinctive styles.

Willibald Farm Distillery Gin

Unlike ‘rough’ spirits such as whiskey and brandy, gin does not require long periods of ageing and if left for much more than six months will quickly become over woody and dry. To age gin well-seasoned casks are essential and a mere two to three months maturation is usually plenty long enough.

Made of 100% Ontario grains, distilled in a copper pot still, infused with botanicals, and aged for a minimum of 1-year in American oak quarter casks.

Hayman’s Old Tom Gin

Hayman’s Old Tom is a recreation of a family recipe dating back from the 1860s. ‘Old Tom’ became the general term for gin. The story is that to prevent their illegal gin shops being discovered, shopkeepers took their stores underground and used the symbol of the black cat (or old tom cat) as a way of showing that they were an illegal distillery. Typically Old Tom gins are slightly sweeter with botanicals such as liquorice.

What Is The Difference Between Gin And Genever?

To understand gin, you must first understand genever. Genever is Dutch for “juniper.” Just because it is juniper-dominated, don’t go thinking of it as Dutch gin. Genever is a clear, botanically rich, malted grain-based spirit that can only be made in Holland or Belgium. It is a blend of two or more distillates: first, a whiskey-like triple distillate made of corn, wheat, and rye (so-called malt wine). Second, a juniper-infused distillate. A possible third part can consist of malt wine re-distilled together with different botanicals. Essentially, you can think of genever as the lovechild of a marriage between whiskey and gin.
