The Bellini drink started in the early 20th century in Venice. It was first made by the famous bartender Giuseppe Cipriani at Harry’s Bar. This bar became a popular place for artists, writers, and celebrities.

The creation of the Bellini is often attributed to the late 1930s, around 1934 to 1936. Cipriani was inspired by the bright colors of a painting by the Italian artist Giovanni Bellini. The painting showed a saint in a pink robe with a glowing golden halo behind him. 

This eye-catching image inspired Cipriani to mix two main ingredients. The first is Prosecco, a sparkling white wine from Veneto. The second is puréed white peaches, which are in season during the summer. The result was a refreshing and elegant cocktail that embodied the spirit of the Italian summer.

Initially, the Bellini was a seasonal drink, enjoyed by locals and tourists alike during the peach harvest. Its popularity quickly spread beyond Harry’s Bar. This was partly due to the growing interest in Italian food and culture after World War II. The drink became synonymous with sophistication and leisure, often served at celebrations, brunches, and social gatherings.
